One victim of a gas blast at an Australian cafe has died of her injuries - as video emerges of the explosion ripping through the premises. Nicole Nyholt, a 37-year-old mother-of-two, was pronounced dead at a hospital in Brisbane at 5am on Friday, three days after Tuesday’s explosion. She was managing the Serves You Right cafe in Ravenshoe, Queensland, when an out-of-control truck smashed into the back of it, igniting gas canisters. Twenty people were hurt in the explosion and seven remain critical in hospital.

A beautiful young lady with a very warm spirit.

Ms Nyholt, also known as Nicole Dempsey, had suffered burns to 80% of her body. She is the daughter of the cafe owners, who were abroad when the explosion occurred, Australia’s 9news reported. Footage of the explosion shows customers running from the shop after the truck hits, then sprinting for their lives as the gas canisters ignite. Some punters are knocked to the ground by the impact of the explosion. It has been reported that among those still seriously ill in hospital are two men, aged 59 and 69.
